Provençal Soupe au Pistou

It’s no secret that here in the Good Clean Kitchen we love our soups, regardless of the season. Soupe au Pistou – the definitive Summer Soup of the South of France – is one of our new favorites. “Pistou” soup is a hearty and refreshing summer bean soup with mixed vegetables and lots of herbs. Warm the soup until the noodles are to your desired softness. Serve with a sprinkle of torn basil pieces and a nice dollop of our Sweet Pea Pesto right in the middle of the bowl. This soup is wonderful on it’s own or for a heartier meal - serve with a warm baguette and a smear of goat cheese.

Taco Time with Mushroom Walnut “Meat” and Cilantro Jalapeño Vinaigrette

A client favorite! Made with our special mushroom and walnut “taco meat” served over a crunchy and colorful mixture of fresh corn salsa, crisp cabbage, green leaf romaine lettuce, a hearty layer of protein packed black beans and our homemade Cilantro Jalapeńo Vinaigrette.

TO PREP: Pull out the veggies, heat the "taco meat" in a sauté pan for 3-5 minutes on medium heat to warm and brown. Pile over the lettuces, top with Cilantro Jalapeno Vinaigrette, fresh herbs, toasted pepitas, avocado and a squeeze of lime. This dish can be served as a salad and enjoyed with Siete tortilla toasted, we love ours served like a tostada! Pairs well with our Bitchin Sauce this week.
