We’ve been on a vegetable-packed coconut curry kick lately—they’re just the perfect warming meal for this time of year. This vegan Thai Green Curry features fresh squash, sweet peas, broccoli and potatoes in a delicious green coconut sauce, served over forbidden black rice. It’s full of warming spice.
TO SERVE: Warm to desired temp, top with Sriracha toasted coconut and cashews, and fresh herbs: cilantro and scallions and a squeeze of lime! Like more spice? We like ours with drizzle of sriracha!
A winter-time comfort food! Brown rice pasta with basil walnut pesto, roasted butternut squash, lemony chickpeas and toasted walnuts. This dish is high in vitamins A, C, E, calcium, potassium + iron....A Super Food!
TO SERVE: We love to enjoy this one warmed. Warm all ingredients gently in a sauté pan until pasta is to desired temp, toss and enjoy! Add a dash of olive oil to loosen noodles as needed + fresh basil + salt and pepper to taste.
If you’re craving sushi, this "sushi roll in a bowl" is a fun and delicious way to get your fix! Sticky rice, edamame (or tofu), crunchy carrots and fresh greens all come together with (gut balancing) ginger cabbage kraut.
TO SERVE: Empty the contents of the jar into a large serving bowl. Top with a our homemade Creamy Wasabi Dressing and a sprinkle of fresh scallion + cilantro. Serve with the Ginger Cabbage Kraut and Nori Wraps on the side.
Veggies + Dips
Combining three things we love: Thai flavors, peanuts and hummus! Protein packed and versatile - serve as a dip with our rainbow of crudités. Also pairs well with flax crackers or toasted pita. For a little extra kick - top with red pepper flakes of a drizzle of sriracha! This one is a hit with the kids!
