HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Cauliflower rice, peanut butter, banana, Dandy blend, Ka’chava chocolate protein powder, cacao powder, cacao nibs, date, and sea salt.
Blueberries, blackberries, cherries, strawberries, raspberries, currants, gluten-free oats, walnuts, flax seeds, hemp seeds, sea salt, cinnamon, Your Super Energy Bomb {Guarana, Maca, Lucuma, Acai, and Banana}.
Hemp seeds, chia seeds, flax seeds, almonds, almond butter, banana, raspberries, strawberries + Kachava Vanilla Protein Powder.
Soups + Salads
Tomato soup is one of our favorites any time of year, but especially when the tomatoes are fresh from the Farmer’s Market. It’s the ultimate healthy comfort food - filled with a variety of vine ripened tomatoes, herbs, garlic, and perfect alongside avocado toast or a melty grilled cheese sandwich. Pairs nicely with our Classic Greek Salad this week.
TO SERVE: Serve warm (or chilled!) with fresh basil leaves, a drizzle of olive oil, and our house made gluten-free croutons.
Meet our new favorite salad sensation! This salad is an all-veggie version of a traditional cobb salad. It’s packed with fresh corn from the cob, crispy romaine, roasted radishes, seasoned baked chickpeas and our favorite Miyokos vegan feta – served with our house made peppercorn ranch, cubed avocado and coconut “bacon”. It’s a delicious combination of flavors and we think you’ll love it
TO SERVE: Cut open the avocado, and cube. Empty the contents of the jar into a large bowl and toss with dressing. top with a sprinkle of our coconut “bacon” and cubed avocado.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
This Curried Chickpea Salad is just like your favorite curried chicken salad….veganized. Loaded with plant-protein, healthy fats, and metabolism boosting spices, these wraps will satisfy your hunger for hours while offering plenty of colorful veggies and lots of flavor. Inspired by Whole Foods Curried Chicken Salad.
NOTE: Please enjoy at the beginning of your week for optimal freshness!
TO SERVE: Enjoy our fresh mixed slaw already dressed with lemon poppy seed dressing and make your curry wraps with provided butter or gem lettuce cups. Also delicious served on crackers, toast, or a crusty piece of bread.
This delicious Pad Thai dish, has lively textures with roasted butternut and fresh bok choy. Super-satisfying flavors, and easy to reheat.
TO SERVE: Simply pop all ingredients into a sauté pan to warm - add a touch coconut oil as needed to loosen noodles + sauce (shouldn't take much!). Garnish with crushed peanuts, a squeeze of lime, cilantro and scallion - and if you like a little spice: a sprinkle of red pepper flakes or a drizzle of sriracha!
It's a one-bowl wonder of sticky rice, sautéed vegetables, marinated mushrooms, tamari roasted seasonal squash, and crisp fresh veggies. Keep the components separate or mix together as a nourishing mixed bowl and top with provided "Holy Hemp" dressing, and serve with kimchi, fresh herbs and nori wraps.
TO SERVE: Warm the components of your choice in a sauté pan over med heat. We like to keep the carrot and jicama fresh + raw. Optional protein add on: poached or fried free range egg or grilled organic chicken.
Veggies + Dips
This carrot hummus features slow-roasted carrots blended with ginger and spicy siracha for a unique, flavorful twist on classic hummus. Perfect served with crackers, pita or our rainbow of crudite.
This lovely pesto is fresh, green and full of spring flavors. Pairs well with pasta, zoodles, or even a dollop with eggs and toast. We love it as a simple light + bright dip for our veggie crudités!
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
We are always looking for ways to satisfy our sweet tooth in a healthy way! This Deep Forest Chia Pudding makes our taste buds so happy with the classic combination of dark chocolate and cherries - but also ticks the nutritional checklist for heart healthy omega 3’s, protein and fiber. Enjoy for breakfast-on-the-go, an afternoon snack, or an after dinner treat.
Chewy dates, crunchy peanuts, creamy peanut butter and a crunchy chocolate shell make your taste buds think you are actually eating a snickers bar! Our version is a healthier alternative to this beloved candy and we think you are going to love it.
