HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
SMOOTHIES
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Killer Chiller Oats
GF oats, sunbutter, maca, cinnamon, medjool date, blueberries, flax, vanilla + sprinkle sea salt.
Coco Berry
Mix of berries, walnuts, banana, cashew butter, cacao, acai, coconut flakes, cacao nibs, hemp hearts + date.
Kalin' It
Mango, kale, cauliflower, almond butter, avocado, Your Super Power Greens (wheatgrass, barley grass, moringa, chlorella + spirullina)
SOUPS
Cauliflower Chickpea Curry
This vegan curry is an explosion of awesome flavors, warming spices, and refreshing lemongrass. We served it over brown rice and love to top with a sprinkle of chopped sriracha toasted cashews + coconut, and a squeeze of lime. Pairs well with Naan bread, over dark leafy greens or topped over a baked sweet potato. Sprinkle with cilantro or scallions and a sprinkle of red pepper if you like a little more spice!
"Get-Your-Greens" Springtime Soup
We wanted the perfect spring detox soup for this menu and this recipe fits the bill! A healing broth made with lemon and miso and loaded with fresh green veggies is perfect for boosting your immunity and resetting your system. Fermented foods like miso are a good source of beneficial bacteria, protein and B vitamins. Do not overheat this soup as you want to keep the enzymes alive. Serve with a dollop of our Mint Pistachio Pesto, salt, pepper and a squeeze of lemon to taste.

NOTE: All of the bowls and salads can be served with optional animal protein
Fan Fave Fajita Bowl
Made with our special portabella and walnut “taco meat”, sauteed onions, peppers and sweet potatoes. Served with cauliflower rice, crisp purple cabbage, romaine lettuce and our homemade vegan chipotle ranch. To prepare: pull out the lettuce and cabbage. Heat all remaining ingredients in a sauté pan for ~ 3 to 5 minutes on medium heat. Pile the fajita ingredients over the lettuces, top with chipotle ranch. *To stretch for family: pair with Siete Tortillas, avocado, salsa, additional shredded cabbage or romaine - and make it a fajita making fiesta!
Chef T's Bento Bowl with "Holy Hemp" Dressing
It's a one-bowl wonder of steamed rice, sautéed vegetables, marinated mushrooms, tamari roasted squash, and crisp fresh veggies. Keep the components separate or mix together as a nourishing mixed bowl and top with provided "Holy Hemp" dressing. To prepare, warm the components of your choice in a sauté pan over med heat - do not overheat. We like to keep the carrot and jicama fresh + raw. Top with provided green cabbage kimchi* (this has a little kick - so taste first) Optional protein add on: soft boiled free range egg or grilled organic chicken.
GCF Asian Style Signature Salad
An Asian version of our classic crunchy salad: curly kale, green + red shredded cabbage, shredded carrots, roasted broccoli, edamame and served with our killer sesame ginger dressing. We are loving this salad served warm or cold. Stretch it as a meal to share? Pair jasmine or brown rice and add a protein of your choice (great with chicken or tofu). Top with provided crushed tamari toasted peanuts.
VEGGIES + DIPS:
Light & Bright Spring Dip
This fresh, green, creamy dip is made with lima beans, sweet peas and cashews - is eery bright and delish! Enjoy as a spread on pita bread or as a dip for crackers and our rainbow of crudite. Pairs well with our Bento Bowl this week.
Chipotle Butternut Squash White Bean Dip
Rich and creamy, earthy, and savory, this dip meets all of our GCF requirements for a great dip. Pairs well with whole grain crackers,a crusty piece of bread, or our veggie crudités . Delicious with our Fajita Bowl!

NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Kelly's Oatmeal Cookie Dough Bites
These nutritious little bites of goodness taste a whole lot like cookie dough! We love these energy bites with coffee for a mid-morning snack or as a treat to share with the kids. Store them in the fridge or freezer until ready to enjoy.
Calming Coco Chia Pudding
A client favorite! Made with antioxidant rich cacao and topped with a nice dusting of reishi infused cocoa powder, this treat is loaded with nutrients and perfect for breakfast, a snack, or dessert!
