HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Cauliflower rice, peanut butter, banana, Dandy blend, Ka’chava chocolate protein powder, cacao powder, cacao nibs, date, and sea salt.
Soups + Salads
This wonderful cleansing soup highlights the fresh combination of simple ingredients made clean: spring peas, asparagus and fresh herbs keeps the finished soup looking and tasting bright + light.
TO SERVE: Delicious warm or chilled. Top with fresh herbs, and a squeeze of lemon if desired. This soup will be most vibrant at the beginning of your week!
An Asian version of our classic crunchy salad: curly kale, green + red shredded cabbage, shredded carrots, roasted broccoli, and served over brown rice, with our killer sesame ginger dressing.
TO SERVE: We are loving this salad served warm or cold. For a warm option, lightly heat all ingredients in a saute pan and top with dressing and crushed peanuts. Stretch it as a meal to share? Add a protein of your choice (great with chicken or tofu).
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
We’ve been on a vegetable-packed coconut curry kick lately—they’re just the perfect warming meal for this time of year. This vegan Thai Green Curry features fresh squash, sweet peas, broccoli and potatoes in a delicious green coconut sauce, served over forbidden black rice. It’s full of warming spice.
TO SERVE: Warm to desired temp, top with Sriracha toasted coconut and cashews, and fresh herbs: cilantro and scallions and a squeeze of lime! Like more spice? We like ours with drizzle of sriracha!
This Curried Chickpea Salad is just like your favorite curried chicken salad….veganized. Loaded with plant-protein, healthy fats, and metabolism boosting spices, these wraps will satisfy your hunger for hours while offering plenty of colorful veggies and lots of flavor. Inspired by Whole Foods Curried Chicken Salad.
NOTE: Please enjoy at the beginning of your week for optimal freshness!
TO SERVE: Enjoy our fresh mixed slaw already dressed with lemon poppy seed dressing and make your curry wraps with provided butter or gem lettuce cups. Also delicious served on crackers, toast, or a crusty piece of bread.
A satisfying combination of roasted rainbow of veggies, cabbage kraut, sautéed greens, and fresh spring greens topped with our delicious creamy basil vinaigrette. This dish makes an excellent vegetarian entree or can be served with protein of your choice.
TO SERVE: We like this one warm, cold or combo. If serving as a warm|cold combo - warm chard and roasted veggies in sauté pan to desired temp - pile over fresh greens and top with provided topping (mix of pumpkin seeds, sunflower seeds, pistachios and cranberries) and dressing.
Veggies + Dips
Creamy, nutty, and rich tasting, our vegan pesto will add protein plus healthy fats, and lots of flavor to your next meal or snack. We use it on everything…..from pasta, to soups, to salads and as a delicious dip with veggies. Our secret high protein ingredient is Baru Nuts - known as the “world’s healthiest nut”.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Kelly's signature chia puddings provide Omega-3 fatty acids, fiber, calcium, antioxidants, magnesium, iron and Vitamins C and E, and plant-based protein. Great for a super charged breakfast or a delicious and energizing afternoon treat. If you love Ben & Jerry’s famous Cherry Garcia ice cream, than this special chia will be your new favorite.
Peanut butter and chocolate are definitely one of our favorite combos! We love these wholesome, sugar-free cookies with coffee for a mid-morning snack or as a treat to share with the kids. Store them in the fridge until ready to enjoy.
