HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Cherry, blueberry, banana, raspberry, açaí, Your Super Energy Bomb, spinach, hemp hearts, cacao nibs + coconut. Delicious with a sprinkle of granola on top.
Soups + Salads
An unusually flavorful white detox soup filled with anti-inflammatory ingredients like celery, leeks and cauliflower and warming spices. Although the color white is associated with processed foods like sugar and flour, white vegetables found in nature are actually high in powerful phyto-chemicals that fight off cancer, improve blood pressure and kidney function.
TO SERVE: Heat soup over stove top at med|high heat to desired temp. Salt and pepper to taste. Garnish with chopped parsley, basil + savory granola.
Light, fresh foods are our inspiration these days and our Chop Stix Chop Salad is just the ticket. Loaded with an assortment of fresh crunchy veggies, brown rice and tossed with our house made Spicy Ginger Dressing. Pairs well with a hard boiled egg or organic chicken if desired.
Note: We recommend eating this at the beginning of the week for optimal freshness
TO SERVE: Top with crunchy peanuts, scallion and cubes of avocado. If you like spice - add a sprinkle of crushed red pepper or sriracha.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
We have taken our own fresh twist on this traditionally heavy lasagna dish by packing in layers of summer’s best veggies and GF lasagna noodles. It’s the perfect light summer meal!
To Serve: The lasagna can be heated in an air fryer (reheat at 350 for 4-8 minutes) or on the stove top (add a dash of olive oil to pan, and gently heat over medium) Top with our house made Pecan Parmesan, fresh basil and a squeeze of fresh lemon if desired. Enjoy with the fresh arugula side salad.
Enjoy all the best Mediterranean flavors in this veggie-packed bowl with Chef Ottolenghi’s Herby Basmati Rice and Za’atar Roasted Chickpeas. With briny olives, and fermented red beet + cabbage kraut - it's a flavor filled dish packed with protein + beneficial probiotic enzymes! Serve with a drizzle of our homemade vegan tzatziki sauce, fresh chopped parsley, and a squeeze of lemon.
TO SERVE: We love this one served room temperature, or as a hot/cold combo (Remove the fresh greens, cucumbers and olives and warm the rest) To stretch for family, enjoy with toasted pita bread and extra greens. Pairs well with baked or grilled organic chicken breast.
This colorful salad bowl makes it easy to "Eat The Rainbow"! Forbidden black rice, purple cabbage, marinated tofu, edamame, lots of greens and crisp bright veggies.
TO SERVE: Serve warm as a stir-fry with a drizzle of our homemade Perfect Peanut Sauce and top with crushed peanuts. Finish with fresh herbs: mint, cilantro + scallion. This dish is wonderful on it’s own as a light vegan meal or pairs well with organic chicken.
Veggies + Dips
We make a lot of hummus in our Tuesday Foods Kitchen, and this Roasted Red Pepper Hummus is one of our favorite variations. Made with roasted red bell peppers, tahini and spices, this dip is creamy, smoky, slightly sweet and a little spicy. Perfect served as a dip for our Rainbow Crudite.
Tzatziki is a cucumber and yogurt-based sauce or dip commonly served in Mediterranean cuisine. Our plant-based version is herbaceous, cool and creamy, but made without the dairy! This would make the perfect dip for fresh vegetables and warm pita, served with olives. Pairs nicely with our Falafel Bowl this week.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
It’s like nut butter meets cookie dough! Packed with super food ingredients: spread on an apple, celery, eat by the spoon full or on top of your Pollinator Chocolate!
This mocha chia pudding combines two of our favorite things, the essence of coffee and rich chocolate, to create a healthy breakfast or afternoon snack that tastes like a decadent dessert. Yum!
