HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Please note, full sized Signature Deliveries are pictured in this menu. ‘Let’s Do Lunch’ clients receive single portions of each entree, salad and soup plus any purchased add-ons.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)

Soups + Salads
Crisp, hearty, and tangy, this kale Caesar Salad has to be one of the best “classic salads” we have ever served. The combination of kale, romaine and crispy chickpeas make this salad extra light and fresh - and best of all - a homemade Vegan Caesar Dressing that's absolutely delicious!
TO SERVE: Empty all of the contents into a large salad bowl, toss with our Vegan Caesar Dressing and finish with a sprinkle of Vegan Pecan Parmesan and squeeze of fresh lemon. *Dressing and Parm are found inside your jar this week.
This delicious dahl is one of our favorite dishes. It also happens to be a powerhouse of nutritional goodness, thanks to the wonderful little lentil that’s at the heart of every dahl recipe. It’s warm and comforting and our version is served with brown rice, roasted cauliflower and lacinato kale.
TO SERVE: In a small pot, allow dahl to simmer on your stovetop on medium low for 10 minutes, until desired temperature is reached. Serve topped with fresh herbs and a dollop of our house made Cashew Crema. Also pairs well with our Tzatziki Dip this week
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
This dish is a a real crowd pleaser thanks to the delicious mix of earthy flavors and textures. Roasted, golden brown cauliflower steaks, and lemony kale layered over polenta - topped with a drizzle of our house made tahini dressing and slivered almonds.
TO SERVE: Warm the Cauliflower steaks, polenta and kale in a saute pan with a little olive oil, over medium heat on the stove top. Or heat the whole dish in an airfryer at 350 degress - until the food is crispy to your liking and comes to temperature. Serve with a sprinkle of slivered almonds + currants.
Pasta Primavera-this classic pasta dish is a wonderful mixture of gluten free penne pasta, colorful vegetables, lemon, and a delightful basil vinaigrette. It’s the perfect summer meal for dining alfresco!
To Serve: Reheat on the stop top over low heat until desired temp. (Or in the microwave with a dash of water to keep the pasta soft.) Top with fresh arugula, fresh basil and a squeeze of fresh lemon if desired. NOTE: The basil vinaigrette is optional - delicious with or without.
If you’re craving sushi, this "sushi roll in a bowl" is a fun and delicious way to get your fix! Sticky rice, edamame (or tofu), crunchy carrots and fresh greens all come together with (gut balancing) ginger cabbage kraut.
TO SERVE: Empty the contents of the jar into a large serving bowl. Top with a our homemade Creamy Wasabi Dressing and a sprinkle of fresh scallion + cilantro. Serve with the Ginger Cabbage Kraut and Nori Wraps on the side.
Veggies + Dips
This is our zesty version of the classic romesco sauce that originates from Spain, which is thick enough to be called a dip or spread. We use heart healthy rolled oats that are lightly toasted until golden to give an earthier flavor to this sauce, along with roasted almonds, red pepper and a hint of smoked paprika. Serve with our rainbow of crudités or smear on a fresh baguette!
Tzatziki is a cucumber and yogurt-based sauce or dip commonly served in Mediterranean cuisine. Our plant-based version is herbaceous, cool and creamy, but made without the dairy! This would make the perfect dip for fresh vegetables and warm pita, served with olives. Pairs nicely with our Falafel Bowl this week.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Coconut chia pudding and fresh strawberries come together in one perfect bite! This naturally seeet and healthy Strawberry Coconut Chia Pudding Parfait is a delightful protein filled breakfast, snack or dessert!
