HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Mango, banana, date, coconut or almond milk yogurt, maple syrup, cardamom, turmeric, Your Super Mellow Golden.
Cauliflower rice, peanut butter, banana, Dandy blend, Ka’chava chocolate protein powder, cacao powder, cacao nibs, date, and sea salt.
Cherry, strawberry, blueberry, blackberry, banana, Your Super Energy Bomb, chia, hemp, flax, cacao nibs, spinach, kale.
Soups + Salads
Our super healthy detox spinach soup is a delicious bowl of nourishing green goodness. Filled with ginger + turmeric + cleansing ingredients that supply a bounty of vitamins, minerals, and antioxidants.
TO SERVE: Separation is normal, give it a good shake and heat on the stove top to your desired temp. Top with a squeeze of lemon (if you have it on hand) and a sprinkle of sea salt, black pepper and red pepper flakes - if you like a little extra spice. Please enjoy this soup on the front end of your week for optimal freshness.
A vibrant mix of romaine, arugula, brussel sprouts, roasted carrots and cauliflower - mingled with roasted red peppers, capers and served with our house made Pecan Parmesan and creamy Vegan Caesar Dressing.
TO SERVE: Enjoy cold or room temperature - or warm your cauliflower and shredded sprouts for a warm cool combo. Toss with dressing and homemade Vegan Pecan Parm.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
A bowl of vibrant sunshine - coconut forbidden rice topped with bright edamame, marinated tofu, baby bok choy, vibrant kale and crisp cabbage slaw - and paired with our house made mango salsa- we hope this one brings some bright flavor to your day!
TO SERVE: Top with our house made perfect peanut sauce, mango salsa, fresh mint, scallion and cilantro. Optional avocado slices too!
Enjoy all the best Mediterranean flavors in this veggie-packed bowl lightened up with cauliflower rice, spring greens + fresh herbs. With briny olives, and fermented red beet + cabbage kraut - it's a flavor filled dish packed with protein + beneficial probiotic enzymes! Serve with a drizzle of our homemade creamy tahini dressing and vegan tzatzkik sauce, fresh chopped parsley, and a squeeze of lemon. To stretch for family, enjoy with toasted pita bread and extra greens. We love this one cold, or at room temp.
This gluten free pasta and zucchini noodle dish really has it going on in the flavor department. Savory and sweet, spicy and bold, pasta puttanesca packs a punch that will make your taste buds salivate with each delicious bite. We have paired it with our version of an Aspen local’s favorite…..LuLu Wilson Kale Salad, served on the side topped with currants and pine nuts.
For a warm dish - reheat the pasta gently in large saucepan, frying pan, or wok, stirring occasionally, until piping hot. Or - we are loving the kale salad and the pasta mixed together, and served at room temperature.
Veggies + Dips
This one has all the comfort and familiarity of a typical creamy, cheesy artichoke dip, but we make it totally vegan with a super flavorful cashew cream. We've also added pepperoncini peppers for that bit of SPICE. Pairs well with whole grain crackers, a crusty piece of bread, or our veggie crudités.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
These scrumptious little no-bake carrot cake bites taste just like a traditional slice of carrot cake, but are so much healthier - raw, oil-free and naturally sweetened. Dipped in our vegan cream cheese icing, these make the perfect energizing breakfast-on-the-go, pre-workout snack, or fun treat to share after a meal. Store in the fridge and enjoy!
What better way to brighten your day than this Lemon Mousse Chia Pudding? Packed with plant-protein, healthy fats, and turmericI - It's like sunshine in a jar! We love it topped with fresh berries for a light and delicious breakfast or as an energizing post workout snack.
