Soups + Salads
This delicious bowl of soup is like sunshine in a bowl! Absolutely packed with veggies, our Golden Goddess Soup is rich in energizing vitamins and minerals such as iron, manganese, phosphorus, potassium and magnesium. It gets the name “golden” from the turmeric – an Indian spice known for having potent anti-inflammatory and antioxidant properties.
TO SERVE: This soup can be served hot or cold. To warm, gently heat in a saucepan on the stove top over medium. Serve with a squeeze of fresh lemon and top with provided curry nuts for an added crunch. Pairs well with fresh herbs if desired. NOTE: This soup freezes well.
This week we are serving our signature salad as a crowd-pleasing stir-fry - It’s is a super flavorful plant-powered meal the whole family will love! Can also be served as a cold and crunchy salad.
TO SERVE: To make a stir-fry - heat 1-2 tablespoons of olive oil or avocado oil in a wok or saute pan, on medium-high heat. Throw in the veggies and the quinoa toss all together until the kale shows signs of wilting and the quinoa is warm. Add the tahini dressing. Mix well, to allow the sauce to heat through. Top with provided toasted sunflower seeds.
Stretch it as a meal to share? Add a protein of your choice. This dish is great with chicken , poached egg or tofu.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
Nourishing Buddha Bowls are our favorite kind of comfort food! Our latest creation for spring is loaded with asparagus, Japanese sweet potatoes, brussels and tofu served with jasmine rice and a creamy + dreamy miso dressing. We think you are going to love it!
TO SERVE: We love this bowl served room temp or warmed gently in a saute pan. Use the Miso Dressing sparingly and to taste….. It has a strong flavor. Note: Do not warm the dressing, to save the delicate nutritional enzymes.
This colorful salad bowl makes it easy to "Eat The Rainbow"! Forbidden black rice, purple cabbage, marinated tofu, edamame, lots of greens and crisp bright veggies.
TO SERVE: Serve warm as a stir-fry with a drizzle of our homemade Perfect Peanut Sauce and top with crushed peanuts. Finish with fresh herbs: mint, cilantro + scallion. This dish is wonderful on it’s own as a light vegan meal or pairs well with organic chicken.
Creamy, flavorful and healthy…Indian cuisine lovers - this one’s for you! Our veggie Tikka Masala is cozy and warming and made with ingredients that will boost your energy, without leaving you bloated or heavy.
TO SERVE: Warm all components to your desired temp and top with fresh cilantro. This week’s Tikka has a bit of a kick! Add a drizzle of our house made Vegan Tzatziki Sauce for cooling, and for complimentary flavor. Salt and pepper to taste. Pairs well with Naan bread.
Note: Let’s Do Lunch clients, find your tzatziki sauce in the 2 ounce compostable portion cup.
Veggies + Dips
This lovely pesto is fresh, green and full of spring flavors. So delicious when served with pasta, zoodles, or even a dollop with eggs and toast. We love it as a simple light + bright dip for our veggie crudités!
Tzatziki is a cucumber and yogurt-based sauce or dip commonly served in Mediterranean cuisine. Our plant-based version is herbaceous, cool and creamy, but made without the dairy! This would make the perfect dip for fresh vegetables and warm pita, served with olives. Pairs nicely with our Falafel Bowl this week.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
When we say this caramel dipping sauce is good enough to eat straight from the jar, with a spoon - we mean it! Sweetened naturally with dates - which provide the rich sweet caramel flavor, plus fiber and many other vitamins and minerals. Serve as a dip for sliced apples for a delicious fall treat! Note: To make the dip more drizzle-able - warm sauce to desired temperature for a softer caramel texture.
We call this key lime pie chia pudding a “treat” but truth be told it’s healthy enough to enjoy for breakfast or anytime of day. It’s made with Kelly’s signature creamy chia pudding on the bottom, and topped off with a cashew-cream key lime mousse that’s loaded with protein, healthy fats and just a small amount of maple syrup for sweetness.
