HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
PLEASE NOTE, FULL SIZED SIGNATURE DELIVERIES ARE PICTURED IN THIS MENU. ‘LET’S DO LUNCH’ CLIENTS RECEIVE SINGLE PORTIONS OF EACH ENTREE, SALAD AND SOUP PLUS ANY PURCHASED ADD-ONS.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy!
Bananas, carrots, dates, coconut flakes, walnuts, almond butter, chia-hemp-flax blend, allspice, cinnamon, sea salt
Cauliflower rice, cashews, cacao powder, cacao nibs, maple syrup, hemp seeds, peppermint essential oil, banana, spinach + Ka’chava chocolate protein powder.
Soups + Salads
Crisp, hearty, and tangy, this kale Caesar Salad has to be one of the best “classic salads” we have ever served. The combination of kale, romaine and crispy chickpeas make this salad extra light and fresh - and best of all - a homemade Vegan Caesar Dressing that's absolutely delicious!
TO SERVE: Empty all of the contents into a large salad bowl, toss with our Vegan Caesar Dressing and finish with a sprinkle of Vegan Pecan Parmesan and squeeze of fresh lemon. *Dressing and Parm are found inside your jar this week.
This wonderful cleansing soup highlights the fresh combination of simple ingredients made clean: spring peas, asparagus and fresh herbs keeps the finished soup looking and tasting bright + light.
TO SERVE: Delicious warm or chilled. Top with fresh herbs, and a squeeze of lemon if desired. This soup will be most vibrant at the beginning of your week!
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
A satisfying combination of roasted rainbow of veggies, cabbage kraut, sautéed greens, and fresh spring greens topped with our delicious creamy basil vinaigrette. This dish makes an excellent vegetarian entree or can be served with protein of your choice.
TO SERVE: We like this one warm, cold or combo. If desired - warm chard and roasted veggies in sauté pan to desired temp - pile over fresh greens and top with provided topping (mix of pumpkin seeds, sunflower seeds, pistachios and cranberries) and dressing.
Here's a hearty vegan meal that satisfies....Amazing sweet potato, corn and black bean burgers seasoned with smoky cumin and chili powder. Sweet, tender, flavorful, so healthy, and delicious! Served over butter lettuce - with house made Chipotle Ranch Dressing and roasted root veggie fries . A crowd-pleasing vegan meal with 10 grams of plant powered protein per serving.
TO SERVE: Warm burgers in sauté pan over medium - high heat, with a dash of olive oil for 2 to 3 minutes per side until warmed through and starting to brown. The fries can be heated in the same pan until crispy.
A client favorite! Made with our special portabella and walnut “taco meat” served over a crunchy and colorful mixture of fresh corn salsa, crisp cabbage, green leaf romaine lettuce, a hearty layer of protein packed black beans and our homemade Cilantro Jalapeńo Vinaigrette.
TO PREP: Pull out the veggies, heat the "taco meat" in a sauté pan for ~3-5 minutes on medium heat to warm and brown. Pile over the lettuces, top with Cilantro Jalapeno Vinaigrette, fresh herbs, toasted pepitas, avocado and a squeeze of lime. This dish can be served as a salad and enjoyed with provided Siete chips. Pairs well with this week’s Cilantro Pepita Pesto.
Veggies + Dips
This one has all the comfort and familiarity of a typical creamy, cheesy artichoke dip, but we make it totally vegan with a super flavorful cashew cream. We've also added pepperoncini peppers for that bit of SPICE. Pairs well with whole grain crackers, a crusty piece of bread, or our veggie crudités.
Rich and creamy, earthy, and savory, this dip meets all of our TF requirements for a great dip. Serve with plantain chips, a crusty piece of bread, or our veggie crudités.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Kelly's signature chia puddings provide Omega-3 fatty acids, fiber, calcium, antioxidants, magnesium, iron and Vitamins C and E, and plant-based protein. Great for a super charged breakfast or a delicious and energizing afternoon treat. If you love Ben & Jerry’s famous Cherry Garcia ice cream, than this special chia will be your new favorite.
Gluten Free Chocolate Chip Cookies GCF style: Rich in plant protein, packed with fiber, free of refined sugars, and oh so delicious. They are soft, chewy and golden…Just like chocolate chip cookies should be!
