HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Mixed berries, banana, cacao powder, hemp seeds, cashews, almond butter, kachava chocolate protein powder, date.
Soups + Salads
Our favorite “detox anytime” salad. A crunchy kale cruciferous salad served with our house made Green Goddess Dressing. It’s jam-packed with ingredients to support your body’s detoxification system: Tuscan kale, broccoli, purple cabbage, cilantro, parsley, hemp hearts, quinoa and topped with roasted radishes. Serve with slivers of avocado and a generous sprinkle of our vegan parmesan.
Let us introduce to you one of our favorite soups! This vegan broccoli cheese soup is SO thick, rich and creamy you would never know it’s dairy free, gluten free and SUPER healthy! Wonderful on its own as a light meal or paired with our Classic Greek Salad this week.
TO SERVE: Empty the contents of the jar into a sauce pan. Gently warm on the stove top to desired temp, salt and pepper to taste (squeeze of lemon if you like) and top with freshly chopped chives and savory granola.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
The traditional Bolognese sauce has a rich cast of characters—up to three kinds of meat, cream, cheese —and packs half a day’s worth of saturated fat into just one serving. Here, cauliflower and mushrooms mimic the texture of ground meat while adding plenty of savory depth, with less than half the calories. Served with sautéed, seasoned green chard and dino kale over gluten free capellini and zucchini “zoodles”.
TO SERVE: Gently empty all contents into a sauté pan and warm to desired temp. Garnish with a sprinkle of our house made Pecan Nut Parmesan and fresh parsley.
This colorful salad bowl makes it easy to "Eat The Rainbow"! Thai rice noodles, purple cabbage, marinated tofu, lots of greens and crisp bright veggies.
TO SERVE: Serve warm as a stir-fry with a drizzle of our homemade Perfect Peanut Sauce and top with crushed peanuts. Finish with fresh herbs: mint, cilantro + scallion. This dish is wonderful on it’s own as a light vegan meal or pairs well with organic chicken or shrimp.
A hearty and satisfying vegan meal bowl made with tofu, brown rice and brightly colored stir-fried veggies. Super-satisfying flavors, and easy to reheat…
TO SERVE: Warm all ingredients in a saute pan or wok over medium heat. Dress with with our homemade Perfect Peanut Sauce and garnish with provided toasted peanuts. Top with cilantro, scallion, and if you like a little more spice: a sprinkle of red pepper flakes or a drizzle of sriracha. This bowl works well at room temp too.
Veggies + Dips
This creamy Herb Tahini Sauce is paired with fresh parsley, dill, cilantro, garlic, and lemon juice that add brightness, zest, and a slew of vitamins and minerals. We love this dip served with our veggie crudite, endive or steamed artichokes.
Wonderful served on pasta, with eggs, on toasted baguette or with our rainbow of crudités. Pairs well with this week’s Black Bean Quesadilla and Cilantro Lime Burrito Bowl
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
We call this key lime pie chia pudding a “treat” but truth be told it’s healthy enough to enjoy for breakfast or anytime of day. It’s made with Kelly’s signature creamy chia pudding on the bottom, and topped off with a cashew-cream key lime mousse that’s loaded with protein, healthy fats and just a small amount of maple syrup for sweetness.
