HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Mango, avocado, spinach, almonds, date, cauliflower rice, coconut flakes + Kachava Vanilla protein powder
Gluten free oats, banana, hemp hearts, peanut butter, date, Ka’chava Chocolate Protein, cacao nibs, cinnamon, sea salt.
Cherry, strawberry, blueberry, blackberry, banana, Your Super Energy Bomb, chia, hemp, flax, cacao nibs, spinach, kale.
Soups + Salads
This minestrone is the perfect combination of comforting, while also super light and refreshing - that leaves you feeling energized and satisfied. It’s LOADED with winter produce, gluten-free pastina, protein and fresh Italian flair. We love it with a dollop of our pistachio pesto, fresh basil and a sprinkle of house made pistachio Parmesan. Serve with Shepherds Bread - handmade, organic,sourdough breads baked in Carbondale, CO. Note: Shepherds bread is not gluten-free
TO SERVE: Gently warm the soup on the stove top. Be careful not to overheat the soup as the pasta is delicate once cooked, and will get mushy if overcooked.
CHECK FOR OLIVE PITS! (sometimes they sneak through…) At Tuesday Foods we love refreshing salads with bold flavors - and this one hits the mark. Crispy fresh lettuces, juicy tomatoes, cucumbers, olives, lemony chickpeas, pickled red onions, slightly spicy pepperoncini and sweet peppadew peppers, plus our favorite vegan feta cheese go into this flavorful Greek salad. Wonderful on it’s own as a light lunch, or you could serve it as a robust side salad with chicken, fish, or pasta.
TO SERVE: Empty contents from the jar and toss with a drizzle of our house made Herby Tahini Dressing and fresh herbs of your choice. Note: A little dressing goes a long way. Use a light hand to dress.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
Cheesy Kale-Artichoke Quesadillas are a fun spin on our classic dip that will have even your pickiest eaters eating kale. (Plus they are vegan and gluten free!)
TO SERVE: Place a nonstick skillet on medium heat and add a small amount of coconut oil or olive oil. Heat the oil in the skillet. Add the quesadilla to the pan and heat each side for no longer than one minute at a time. After flipping it a few times, your quesadilla will be reheated in a matter of minutes and ready to enjoy.
Serve with side green salad on the side (cold or room temperature)
Made with our signature walnut + portobello “taco meat”. Served with sautéed onions + peppers, seasoned cauliflower rice, crisp purple cabbage, and romaine lettuce.
TO SERVE: First, pull out the lettuce and cabbage and put in a serving dish. Heat all remaining ingredients in a sauté pan for ~ 3 to 5 minutes on medium heat. Pile the fajita ingredients over the lettuces, top with a squeeze of lime, fresh cilantro, scallions, pumpkin seeds - and enjoy a fajita making fiesta!
The ultimate Mediterranean bowl with quinoa and hemp tabbouleh, fresh parsley + dill, fresh spring greens, creamy tahini dressing and topped with our gluten free + vegan falafel.
TO SERVE: Warm the Falafel in a saute pan for a few minutes on each side- just until warm. Leave the lettuces crisp, and enjoy as a salad with a drizzle of Tahini Dressing. Serve this dish with our house made Vegan Tzatziki Dip. (No pita chips served this week.)
Veggies + Dips
Move over hummus...There's a new dip in town! With a macadamia nut base, the smoky, sweet and spicy flavors in this red pepper dip make it a standout. Pairs well with pita wedges, crackers or a crusty piece of bread. We love it as a simple light + bright dip for our veggie crudités!
Our homemade Bitchin' Sauce recipe is made with almonds, fresh lemon juice, olive oil and spices - one bite and you’re hooked. Serve as a dip with our rainbow of crudités or tortilla chips. It is awesome as a veggie dip for the kiddos - try with roasted broccoli!
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Coconut chia pudding and fresh strawberries come together in one perfect bite! This naturally seeet and healthy Strawberry Coconut Chia Pudding Parfait is a delightful protein filled breakfast, snack or dessert!
