HERE’S WHAT’S ON YOUR PLATE THIS WEEK:
THIS MENU IS VEGAN BUT YOU CAN EASILY ADD PROTEIN OF YOUR CHOICE TO ANY MEAL.
PLEASE NOTE, FULL SIZED SIGNATURE DELIVERIES ARE PICTURED IN THIS MENU. ‘LET’S DO LUNCH’ CLIENTS RECEIVE SINGLE PORTIONS OF EACH ENTREE, SALAD AND SOUP PLUS ANY PURCHASED ADD-ONS.
Smoothies
NOTE: Smoothies are kept in the freezer. TO PREPARE: Fill the cup with your favorite nut or oat milk (we love almond and coconut), allow to soften for 5 minutes. Empty contents into the blender and blend on high, until smooth. Enjoy! (Scroll to bottom of page for photos of each.)
Cauliflower rice, peanut butter, banana, Dandy blend, Ka’chava chocolate protein powder, cacao powder, cacao nibs, date, and sea salt.
Gluten free oats, blueberries, banana, sun butter, flax seeds, date, sea salt + cinnamon.
Soups + Salads
Fresh, crisp and heavy on the veggies, this is the salad we have been craving! With plant-based proteins, rice noodles, and delicious Thai flavors.
TO SERVE: Serve this salad cold with a drizzle of our house made Sesame Ginger Dressing. Garnish with lime wedges, a sprinkle of crushed sweet ginger peanuts, and your favorite mix of herbs. All the fresh, crunchy toppings are provided. NOTE: Enjoy this salad at the front end of the week for optimal freshness.
This Szechuan Carrot Ginger Soup will warm you from the inside out. Seasoned with ginger, hot pepper flakes and sesame oil and made creamy with nuts, this soup is soul-warming, nourishing and delicious. We love the healing benefits of carrots, mainly the antioxidant-rich carotenoids that are known to pack anticancer powers.
Prep tip: This soup may thicken in fridge - add water to desired consistency - salt, pepper and spice to taste. Garnish with curried almonds and coconut.
Bowls + Entrees
NOTE: All of the bowls and salads can be served with optional animal protein
Enjoy all the best Mediterranean flavors in this veggie-packed bowl with Chef Ottolenghi’s Herby Basmati Rice and Za’atar Roasted Chickpeas. With briny olives, and fermented red beet + cabbage kraut - it's a flavor filled dish packed with protein + beneficial probiotic enzymes! Serve with a drizzle of our homemade vegan tzatziki sauce, slivered almonds, pine nuts and currants, fresh chopped parsley, and a squeeze of lemon. Pairs well with our beet hummus this week
TO SERVE: We love this one served room temperature, or as a hot/cold combo (Remove the fresh greens and warm the rest) To stretch for family, enjoy with toasted pita bread and extra greens. Pairs well with baked or grilled organic chicken breast.
This Curried Chickpea Salad is just like your favorite curried chicken salad….veganized. Loaded with plant-protein, healthy fats, and metabolism boosting spices, these wraps will satisfy your hunger for hours while offering plenty of colorful veggies and lots of flavor. Inspired by Whole Foods Curried Chicken Salad.
NOTE: Please enjoy at the beginning of your week for optimal freshness!
TO SERVE: Enjoy our fresh mixed slaw already dressed with lemon poppy seed dressing and make your curry wraps with provided butter or gem lettuce cups. Also delicious served on crackers, toast, or a crusty piece of bread.
If you’re craving sushi, this "sushi roll in a bowl" is a fun and delicious way to get your fix! Sticky rice, edamame (or tofu), crunchy carrots and fresh greens all come together with (gut balancing) ginger cabbage kraut.
TO SERVE: Empty the contents of the jar into a large serving bowl. Top with a our homemade Creamy Wasabi Dressing and a sprinkle of fresh scallion + cilantro. Serve with the Ginger Cabbage Kraut and Nori Wraps on the side.
Veggies + Dips
This fresh, green, creamy dip is made with protein-packed edamame, and our special cashew crema. Pairs well with pasta, zoodles, or as a spread on rustic toast. We love it as a simple light + bright dip for our veggie crudités.
Tzatziki is a cucumber and yogurt-based sauce or dip commonly served in Mediterranean cuisine. Our plant-based version is herbaceous, cool and creamy, but made without the dairy! This would make the perfect dip for fresh vegetables and warm pita, served with olives. Pairs nicely with our Mediterranean Bowl this week.
Sweets + Treats
NOTE: all of our sweets are made with whole, unrefined ingredients. Enjoy guiltlessly as snack or after dinner treat.
Soft and gooey peanut butter blondies loaded with chunks of chocolate and Justin’s peanut butter cups!
A client favorite: Kelly's classic chia pudding recipe, infused with a touch of vanilla + maple, and topped with house made blueberry coulis.. This treat is loaded with nutrients and perfect for breakfast, a snack, or dessert!
